Ingredients: 480 g self-raising flour; 120 g good quality cocoa powder, the darker the better; 3 x 20 cm sandwich tins, greased, then lined on the bottom only; ¼ tsp salt; 200 g unsalted butter, melted; 300 g caster sugar; 300 g soft light brown sugar; 100 g dark chocolate, melted; 12 fresh cherries (with stalks on); cherries from a 390 g jar of black cherries in kirsch; cherries from a 390 g jar of black cherries in kirsch; a few chocolate chips; 4 medium eggs; 300 ml evaporated milk; 125 ml syrup from a 390 g jar black cherries in kirsch; 125 ml syrup from a 390 g jar black cherries in kirsch; cherries from a 390 g jar of black cherries in kirsch; 6 tbsp cherry jam; 350 g dark chocolate, melted and slightly cooled; 1 naked cake batch of Basic Buttercream

This cake has been on our menu since the very beginning. The combination of dark chocolate and cherries is always a winner and it looks just beautiful. It’s a great cake to start with if you’re nervous about icing cakes, as the decoration is simple but super effective: it’s a naked cake (meaning you just fill the layers and top with buttercream) and the only decoration is chocolate-dipped cherries. Maximum effect with just a little effort!
