Caramelising chocolate takes a little time and patience, but there is nothing complicated to it at all. It takes a fair bit of stirring but it’s something you can do while you’re doing other jobs in the kitchen, and it really is worth taking the time to do it. The flavour is difficult to describe: it tastes nutty and caramelly and reminds us all of Caramac bars.
