We get through a lot of apple jelly in the bakery and it’s always my mother-in-law Kathleen’s recipe. It’s based on one from the Edinburgh Book of Plain Cookery which was given to Kathleen by her Auntie Belle for Christmas 1963, and she still makes it for us now. I remember getting my first jelly pan and making a batch of this from the windfall apples in the garden and feeling all sorts of proud and domesticated!
