This is the lemon curd my mum always makes. I don’t know the origins of the recipe, and my mum can’t remember where she found it, but she has been making it for years (mostly for my brother-in-law Niall, who loves it) and I’m delighted to include it here. We fill cupcakes and layer cakes with it, but it’s also wonderful on toast and scones.

It’s an easy recipe to play around with: we make a grapefruit variation for our Pink Grapefruit
