Shortcrust is surprisingly easy to make. This recipe is the one Darren was taught to make at the start of his career and we use it for all the savoury quiches and pies in this chapter. For vegan shortcrust, use plant-based butter (not soft spread) — you may need a little more water.

Ingredients

  • 400 g plain flour
  • 200 g unsalted butter or plant-based butter, fridge cold

Method

As your hands get a little messy making this, it’s a good idea to measure out all your ingredients before you start.

Weigh out the flour into a big mixing bowl and add a generous pinch of salt and pepper. Chop the butter into small cubes and measure the ice water into a jug.

Give the flour, salt and pepper a mix with your fingers to combine. Add the butter and rub it in with you
