Our sausage rolls are as hearty and generous as our cakes, and these are no exception, even though we’ve scaled the recipe down a little! They are jam-packed with all sorts of lovely things, and while there are a few steps to this recipe, none of them are difficult. I love them served with some mango chutney on the side.

Ingredients

  • large baking tray, lined
  • 2 large baking potatoes, peeled and diced
  • 2 tbsp olive oil
  • 150

Method

Preheat the oven to 210°C (190°C fan).

Boil the potatoes until tender, then drain and roughly mash and set aside to cool. In a frying pan, heat the oil on a medium heat and add the mushrooms, tomatoes, onion and garlic. Fry until everything is soft but not colour
