These pies are jam-packed with roast vegetables and full of wonderful textures, colours and flavour. We spice the filling with our spice rub, but feel free to use Cajun seasoning or a pinch of chilli flakes instead, or try stirring a spoonful or two of vegan pesto through just before you fill the pies.
