We absolutely loved testing this recipe! The panko breadcrumb coating on the halloumi gives it a lovely crunch and contrasts with the roasted mushroom. It’s really simple to make and tastes great. If you’re not following a plant-based diet, you can of course make it with any sort of halloumi.

Ingredients

  • 2 portobello mushrooms
  • 3 tbsp olive oil
  • 200 g vegan

Method

Get the oven on at 200°C (180°C fan).

Brush the mushrooms with two tablespoons of the oil and place on a rack over a baking tray. Roast for 20 minutes, turning them over halfway through. Slice the halloumi horizontally so you have
