These are very simple to make: just toasted hazelnuts and almonds ground with sugar and bound together with some egg white, then covered in pine nuts. For small cookies, they provide a full mouthful of toasted-nut flavor and a touch of sweetness. Pine nuts get star billing in the name since they steal the show as the garnish. These are excellent as treats or sweet endings to any meal.
