This is our version of the classic French pain de mie. It’s an excellent, all-around sandwich bread, rich and flavorful from the inclusion of egg, milk, and butter. It’s what grocery store soft bread was based on but is so much better tasting and so much better for us. It has only seven ingredients, all readily recognizable, versus store bread with as many as twenty ingredients, many of which we don’t even know how to pronounce.
