Name: Jake’s Angel Food Cake

Ingredients: 1½ cups [300 g] granulated sugar; 1½ tsp cream of tartar; 1½ tsp lemon juice; 1 Tbsp vanilla extract; 1 vanilla bean; 1 cup [120 g] cake flour; 2 Tbsp water, warm; ½ tsp fine sea salt; 12 egg whites, room temperature

Use a real vanilla bean as well as the best vanilla extract you can find to make this cake extra special. Vanilla is the star here, and the light texture is the essential supporting actor.

Why is it called Jake’s Cake? Our version is named after Amy’s firstborn, Jake, which makes it that much more appropriate for Mother’s Day. It’s a light and super flexible cake that can be garnished just as your mother would like it.
