This round challah, which is traditionally made for Rosh Hashanah, the Jewish new year celebration, symbolizes the spiral of the passing seasons and years. The new year’s challah is sweeter than braided challah, because sweet foods are traditional for Rosh Hashanah to encourage the new year to be sweet.

This recipe comes from my friend Yocheved Hirsch, a well-known teacher of kosher cooking, who left the New York area to reside in Israel.
