In the United States and the British Isles the name “Vienna Bread” usually indicates a commercially or industrially made milk-based bread. The following recipe is an authentic Viennese one, adapted from Eduard Mayer’s Wiener Süss-speisen (Viennese Sweets) (Trauner Verlag, 1982). The close-textured loaf studded with raisins makes an excellent breakfast or brunch bread.
