Variously called “Scotch pies” or “mutton pies,” these are made from lean ground lamb simply seasoned with salt, pepper, and a dash of nutmeg. I remember tasting these for the first time in my teens, at the home of my late childhood friend, Noel Giles. The Gileses always made special pilgrimages to Kearny, New Jersey, where several butchers supplied specialties such as these pies to a thriving Scottish community there.
