In the past few years, butterscotch has once again become a popular flavor. So, why not butterscotch pie?

This is an ideal recipe for a crumb crust, but if you prefer a pastry crust, follow the directions for the baked pie shell in the recipe for Lemon Cream Meringue Pie.

Ingredients

  • 1 recipe Nut Crumb Crust, made with almonds or pecans and light brown sugar

Method

  1. Prepare and bake the crust. Let it cool.
  2. To make the filling, combine 2 cups of the milk, the sugar, and salt in a nonreactive saucepan; whisk once to mix and bring to a boil over low heat.
  3. Place the remaining ½ cup of milk in a mixing bowl and whisk in the cornstarch, then the eggs. Return the milk and sugar mixture to a boil over low heat, then whis
