A few years ago, I was looking for an interesting recipe for a rice tart to use in a class, and I came across this version in Maria de Lourdes Modesto’s monumental cookbook Cozinha Tradicional Portuguesa (Traditional Portuguese Cooking). It is based on a tart made in the Azores, the bleak islands which are Europe’s westernmost point in the Atlantic.
