Ingredients

  • ¾ cup (about 3 ounces) whole blanched almonds
  • ½ cup sugar

Method

  1. Combine the almonds and sugar in a food processor fitted with the metal blade. Pulse on and off repeatedly until the mixture is finely ground, about 1 minute.
  2. Add the almond extract and one of the eggs and continue to pulse until the mixture becomes a smooth paste.
  3. Divide the butter into 8 pieces and add them to the work bowl. Pulse again repeatedly u
