These rich tarts, which resemble a crème brûlée, combine a custard cream and raspberries under a caramelized top. To finish the tops you will need a blowtorch (available for under $20 in most hardware stores). The edge of the crust would burn if these tarts were placed under the broiler to caramelize the sugar topping.

  1. Prepare and chill the dough.
  2. Set a rack at the middle level of the oven and preheat to 325 degrees.
  3. To make the crusts, divide the dough into 8 or 10 small pieces and on a floured surface roll each into a thin circle. Press the circles of dou
