A mainstay of the tea table, these little tarts are easy to prepare ahead. Both the shells and the curd may be made in advance; then it takes only minutes to assemble.

If you can find Meyer lemons (see Sources of Supply) for the lemon curd, it will be sublime.

  1. Prepare and chill the dough.
  2. To make the lemon curd, combine the lemon juice, butter, and sugar in a heavy enamel pan. Bring to a simmer over low heat, stirring occasionally.
  3. Whisk the yolks in a bowl and whisk in ½ cup of the hot lemon mixture. Return the remaining lemon mixture to a simmer and whisk the yolk mixture back into it. Continue whisking f
