The combination of almonds and pine nuts in these little tarts makes them flavorful and luxurious. If you don’t have any pine nuts, you can substitute sliced or slivered almonds for them.
To make the almond filling, combine the almonds and sugar in a food processor fitted with the metal blade. Pulse on and off repeatedly until the nuts are finely ground, about 1 minute. Add the almond extract and one of the eggs and continue to pulse until the mixture becomes a smooth paste.
