This standard French cookie is light and delicate. The currants add a note of richness.

Ingredients

  • 8 tablespoons (1 stick) unsalted butter, softened
  • ½ cup sugar

Method

  1. Set racks at the upper and lower thirds of the oven and preheat to 350 degrees.
  2. In a bowl, beat the softened butter and add the sugar in a stream. Continue beating until the butter/sugar lightens. Add the vanilla, then the eggs, one at a time. Beat unt
