These chocolate cookies are a great specialty of Basel, in northern Switzerland, near the French border. There are many versions made with cocoa powder. These, made with chocolate, are more tender and flavorful, I think.

Ingredients

  • cups sugar
  • cups (about 8 ounces) whole unblanched almonds

Method

  1. Place the sugar and almonds in a food processor fitted with a metal blade. Pulse repeatedly until the nuts are finely ground. Do not overprocess or allow the mixture to become warm.
  2. Chop the chocolate finely into small pieces and add to the processor. Pulse until the chocolate is finely ground and mixed with the almonds and sugar. Add the remaining ingredients
