Use this dough to make a chocolate version of sablés, or combine it with Vanilla Sablé dough to make pinwheel and checkerboard cookies, below.

Method

  1. In a mixer bowl, beat the butter with the sugar and salt until the mixture is very light, about 5 minutes on medium speed. Add the egg and beat until smooth. Combine the baking soda with the milk and beat in. Remove from the mixer and sift over and stir in the flour and cocoa.
