This cookie, which was introduced at the turn of the twentieth century, has remained one of the most popular of all American cookies ever since.

Ingredients

Sweet Pastry Dough

  • 2 cups unbleached all-purpose flour

Method

  1. To make the dough, stir the dry ingredients together in a mixing bowl to combine. Cut the butter into 8 or 10 pieces and rub into the dry ingredients until there are no large pieces of butter visible. Be careful that the mixture remains cool and powdery. Beat the eggs together lightly and with a fork stir them into the dough until it masses together.
