Mace, the outer covering of a nutmeg, is the traditional flavoring for pound cake.

Ingredients

  • ½ pound (2 sticks) unsalted butter, softened
  • 1 cup sugar

Method

  1. Set a rack at the middle level of the oven and preheat to 325 degrees.
  2. In a bowl, beat the butter with the sugar until soft and light. Beat in 3 of the eggs, one at a time. Beat in the salt, mace, and vanilla extract.
