Descendants of ancient ceremonial breads, used by the Romans in the celebration of fertility rites and weddings, gingerbreads are related to many other preparations such as the Italian pan-forte, the French pain d’épices, and even English fruitcake.

Good gingerbread is easy to prepare, and benefits from aging for a day or two after baking. Of course, make sure the spices you use are as fresh as possible and the gingerbread will have a strong, clean flavor.
