This was a popular dessert during the first year the Cellar in the Sky at Windows on the World was open. This dessert originated with Barbara Kafka, who planned the menus, though my recipe is a bit more elaborate.

If you wish, you may substitute another sweet, fortified wine for the Marsala, or use a liqueur to flavor the whipped cream.
