Though it isn’t the same recipe, this is based on a memory of a delicious cheesecake that my late friend Joseph Viggiani used to make at his Cafe Sandalea in New York.

Method

Set a rack at the middle level of the oven and preheat to 350 degrees.
Prepare the dough and place it in the prepared pan. Pat it down evenly and firmly to cover the pan bottom.
