Though I had read recipes for barm brack (barmbrack translated from the Irish language means “speckled cake”) over the years, I was never tempted to make it until I tasted it. My friend Sandy Leonard had just returned from a trip to Ireland laden with baked goods, among them several versions of this cake. It is pleasantly moist and tender, like a lean version of panettone, which it resembles in flavor, preparation, and appearance.
