Scotch Pancakes

Also known as drop scones, Scotch pancakes were one of the first sweet things we helped Dad to make in the shop. We would ladle the batter onto the special griddle and Hip over the pancake with delight to see, hey presto, the tasty-looking cooked side! On Shrove Tuesday, Dad’s Uncle Freddy, a widower who had worked in Beti’s tea room as a chef, came into the shop and made the traditional pancakes for the café. Customers rarely stopped at just one.
