Eccles Cake

Being the cake that cemented Mum and Dad’s blossoming relationship, the Eccles cake remains one of Mum’s favourites. At first, I feared these would be hard to make, but once you have mastered the art of making puff pastry (or simply buy some) the filling is easy. Dad was a great believer in a generous sprinkling of sugar. I’ve bought Mum different variations over the years but mass produced Eccles cakes just don’t taste the same.
