This sponge cake, filled with jam and cream and dusted with icing sugar, is one of the nation’s favourite sponges. We sold Victoria sponge as a whole cake, but if there were any left over towards the end of the day, they would be cut up and sold as individual slices in the tea room. One day, someone ordered a Victoria sponge with lemon curd filling instead of the traditional jam-and-cream filling, which Dad made, much to his amusement.
