Dad made Madeira sponge as a batch cake every week and it was popular with the older generation who liked to keep one in the house for unexpected guests. It is a light, golden sponge that’s very satisfying with a cup of tea or glass of Madeira wine, as was the tradition. I like to picture the Weybridge ladies serving a slice of Dad’s Madeira sponge and enjoying a civilized drink together.
