Former customers mourned the loss of Peter’s meringues probably more than any other cake when the tea shop closed in 2000. I’ve given some of Dad’s tips here to help you make your own. He always left his meringues in the oven overnight with the oven door slightly open, he was scrupulous about sterilizing equipment and he sandwiched the meringues together with fresh cream whipped with some caster sugar.
