These English macaroons were always on sale in the tea shop. At first, I thought they might be too old fashioned to include in this book, but when I bit into one I loved the pure coconut taste, as well as the fact that they are crunchy on the outside, yet moist and chewy inside. I like them plain, but you can always dip them in melted chocolate, as Peter sometimes did.
