This was one of the iconic cakes of my childhood. My friend, Karen, had the cake for her birthday for many years with ‘Happy Birthday Kanga’ inscribed on a chocolate disc placed on top. The combination of a light chocolate sponge infused with Kirsch, cream and cherry pie filling brings Karen’s childhood birthday parties back; dancing in flares and cheesecloth shirts to Abba’s ‘Money, Money, Money’ as her father, Keith, threw coins and notes
