This is another lovely homemade jam and it works particularly well in the chocolate cream slices.

Ingredients

  • 1.8 kg Victoria plums, halved and stoned
  • 425 ml water
  • 1.8

Method

Place the fruit and water in a pan and simmer for 15-20 minutes until the plums are soft.

Add the sugar and stir until it is dissolved. Then boil the mixture rapidly for 15-20 minutes until the jam is set. (See the recipe above for information on how to test for a set.)

Take the pan off the heat, skim the surface with a skimming ladle and pour the jam into sterilized, warm jars.
