When we had a surplus of apples from the greengrocer or a family member or friend. Dad made apple dumplings, both to sell and to serve in the tea room. These dumplings, encased in puff pastry, are stuffed with a mix of fruits and cinnamon.
Grease a baking sheet.
In a bowl, mix together the raisins, caster sugar and cinnamon.
Roll out the pastry and cut 4 x 20cm circles, each of which should be large enough to encase each apple. Don’t discard the remaining pastry as you will need this later on.
