Carrot Cake

When carrot cake became popular we attempted to persuade Dad to make it in the shop. Dad was a traditionalist who stuck with the old-fashioned cakes, but after several years he made the carrot cake, much to everyone’s surprise. When Dad retired he made carrot cake with my son Joe who added some icing on top. Dad couldn’t resist making some marzipan carrot shapes to decorate it with.
