Dad occasionally made banana loaf in the tea shop and Mum has added some chocolate to the mix. Not surprisingly, children love this cake. It can be transformed into a pudding if it is heated and served with cream or ice cream.

Ingredients

  • 100 g dark chocolate (with 70 per cent cocoa solids)
  • 110 g margarine, plus extra for greasing

Method

Preheat the oven to 180°C/gas mark 4. Grease a 900g loaf tin and line it with baking parchment.

Melt the chocolate in a bowl set over a pan of simmering water. Using a handheld whisk, cream the margarine with the sugar. Gradually add the eggs, beating the mixture constantly.
