Apple Cake

Growing up in a tea shop meant that as adults we contributed to ingredients if we found anything Dad could use. My sister lived near a farm and occasionally purchased sacks ol windfall apples at just two pounds each. One of Muni’s favourite cakes is this moist sponge with pieces of apple. Nothing offers comfort quite like apple pie or cake.
