In the days when there was a local bobby who walked the streets of Weybridge, he regularly popped in to visit Dad in the bakehouse. One policeman always enjoyed a Belgian bun or two with a mug of tea. The policeman’s uniform always got coated in flour, which was a small price to pay for a sticky Belgian bun.
Put the yeast and 5g of the sugar into the warm water and leave the mixture to ferment for about 10 minutes.
Mix the flour, salt, milk powder and remaining sugar together in a large bowl. When the yeast is ready, add it to the flour mixture with the egg and softened butter. Mix the ingredients well to combine. If the dough seems too sticky, add an extra tablespoon of flour to the dough.
