I spotted Linzer biscuits in a café in Poschiavo and they looked just like the ones Dad made, with two biscuits sandwiched together, coated in icing sugar with a jam centre. At first, I was surprised to see them in this little Swiss-Italian village, but these are classic biscuits you’ll see in many European cities.

Ingredients

  • 400 g plain flour, plus extra to dust
  • 200 g butter

Method

Rub the flour and butter together until the mixture resembles fine breadcrumbs. Mix the sugar and beaten egg together in another bowl, then add this to the flour and butter mixture with the salt and mix until a dough is formed.

Wrap the dough in cling film and place it in the refrigerator for about 30 minutes. After this time, remove half of the dough, leaving the other half in the refr
