These were a traditional delicate cake enjoyed by civilized Weybridge folk. When Dad showed me how to make them I was surprised how simple the recipe was and how quickly they baked. I also saw almond macaroons in Poschiavo that looked and tasted very similar to Dad’s, with an almond slice on top.

Method

Preheat oven to 180°C/gas mark 4. Line a baking sheet with some baking parchment.
