Frank: In 2003 our organization prepared to open Zingerman’s Roadhouse, a restaurant specializing in really good American food. Alex Young, the managing partner, asked us to develop a signature bread for the opening. At the time Shelby Kibler was leading our bread bakery, and Shelby and I began researching old American bread recipes. Our rese
