The filling of this tart recalls gianduja, the delicious chocolate hazelnut confection of Italy’s Piemonte region. I like to use a plain crust with this filling so that all the chocolate emphasis is within, plus the pale crust and dark filling provide fun colour contrast. Purchasing hazelnuts with their skins already removed makes preparing the filling much easier.
