I remember the pastry chef at the hotel where I worked in Zurich in the early 1970s improvising a tart like this one afternoon when we didn’t have a lot of work to do.

It’s also a model for tarts made with other fruits.

Ingredients

  • 3 large tart apples such as Granny Smith, about 675 g
  • 70 g sugar</

Method

  1. Set a rack in the lowest level of the oven and preheat to 180°C/gas mark 4.
  2. Pare, halve, and core the apples. Set a box grater in a shallow bowl and grate the apple halves over the grater’s largest holes, or use the largest grating blade of your food p
