Because of its relatively high butter content, Flaky Pastry Dough can become soft and sticky if excessively handled. Follow the instructions for using the chilled dough until you feel confident enough to try rolling the freshly prepared dough. In either case, you may also try the alternative method for rolling the dough directly on the flan tin base (step 6) to simplify transferring the dough to the tin.
