Gruyère and other aged cheeses are a perfect pairing with the slight bitterness of walnuts in this easy and delicious bread.

Ingredients

  • 1 batch dough for Perfect White Tin Bread, completed up to the end of step 5
  • 225 g coarsely grated Swiss Gruyère cheese, chopped into 5mm pieces

Method

  1. Add the cheese and nuts to the mixer bowl before beginning with step 6, and then continue with the master recipe. In a mixer fitted with the dough hook, beat the rested dough on a medium speed until it is smoother and more elastic, about 2 minutes more. Remove the dough to a lightly oiled bowl and turn it over so that the top is oiled. Press clingfilm against the surface
