Use this recipe as a model for the variations in this chapter. Once the sponge is made, the dough comes together relatively quickly. This dough may also be formed and baked in the same way as any of the one-step breads in Chapter 5. Here, I’m giving you a machine mixing method, but you can also mix this by hand as for the One-Step Bread Dough.
